Don't let the name fool you - there's nothing "burnt" about them. These flavorful morsels come from the exterior portions of the meat, better known as the "bark." The meat is seared to perfection on the outside and incredibly tender on the inside. When cut into chunks, they pack a mouthful of tender flavor, and the caramelized edges give them a slightly crispy exterior that earned them the name burnt ends.
