Do you take reservations?
We operate on a "first come, first
served" basis. However, we do accept and encourage reservations for parties of 8 or more. There may
be a limitation to the size of your dining party dependant on the accommodations of the restaurant
you plan on visiting. For larger parties who are interested in a private event, we do have private
dining facilities available at our Freight House and Martin City locations. For more information,
please contact the restaurant you'll be visiting for options and availability.

If I arrive early before the rest of my party, can I be seated at a table?
If you have a reservation and your table is ready, you are welcome to sit down before your entire party arrives.

Can you accommodate large parties?
For parties of 8 or more we encourage you to call for a reservation. We can often accommodate large parties up to a certain size, depending on
restaurant
locations.
We also have
private dining facilities available at our Freight House and Martin City locations.

What are your accommodations for children?
For kids 10 and under, we have a children's menu with an assortment of puzzles, games and coloring pictures to keep your young ones amused while they're waiting for their meals. Booster chairs and highchairs are also available.

Do you sell gift cards?
Yes. They are available in any denomination and can either be purchased online, by phone at 816-942-9141, or in person by visiting
any of our four
restaurant
locations. Jack Stack
Gift Cards are valid for use at any our restaurants or you can redeem them for carryout, catering, private dining, or nationwide shipping.
We also offer customized Jack Stack Gift Certificates for our Jack Stack
Shipping meal packages.

What are your hours of operation?
Our restaurant dining rooms are open Monday through Thursday - 11:00am to 10:00pm, Friday and Saturday - 11:00am to 10:30pm and Sunday - 11:00am to 9:00pm. We open daily for carryout at 10:00am and phone-ahead orders can be picked up as early as 9:00am with advanced notice. Occasionally, our Carry-Out doors are opened even earlier during certain holidays and special events. For more information, please contact the

How do you describe your menu?
Our Dining Menu has been developed over the past 50+ years and contains a mixture of hickory smoked barbecue, steaks, seafood, fresh seasonal vegetables, and many unique specialty items.
Our barbecue selections consist of standard items such as pork spare ribs, beef ribs, baby back ribs, beef brisket, burnt ends, turkey, ham, pork, and Strawberry Hill sausage. We feature all Certified Angus Beef , tender chicken, and award-winning lamb ribs. A few of our signature items are the Crown Prime Beef Short Ribs, New Zealand Rack of Lamb, and Smoked Prime Rib.
From our founder's travels along the Yugoslav coast in the mid 1970's, Jack Fiorella and his wife, Delores, began grilling fresh seafood over hickory wood fires. Our menu offers farm-raised Atlantic Salmon, Ruby Red Trout, and Fire Kissed Jumbo Shrimp. In addition, we also offer a daily Fresh Fish Feature that has in the past include Yellow Fin Tuna, Swordfish, Mahi-Mahi, Catfish, Walleye, Seabass, Halibut, Shark, and Red Fish. To accompany your meal, we offer our mouth-watering side dishes like Hickory Pit Beans, Cheesy Corn Bake, Creamy Coleslaw & Cheesy Potato Bake.
We also offer an extensive Drink Menu with a wide variety of wines, martinis and a vast selection of domestic, imported, and specialty beers.

How is the food prepared?
Jack Stack's distinctive Hickory Wood-Fired cooking process results in a seared exterior and a tender interior. We have experienced staff available if you would like to discover in greater detail just how we're able to transform brisket and ribs into what many call "The First Taste of Kansas City." We are consistently voted KC's best barbecue and take great pride in being honored as such, because in this town, that's really saying something.

Do you offer soups and salads?
Yes. We offer a variety of fresh, crisp salads that are made to order, and homemade soups that vary according to the day of the week. On Monday, Wednesday, and Friday, we offer our own Burnt End Stew. On Tuesday and Thursday, we offer our Smoked Chicken and Sausage Gumbo. On Saturday and Sunday, we offer our Wood-Fired Chicken and White Bean Chili.

Do you offer vegetarian dishes?
Yes. We offer a steamed or grilled vegetable medley, a grilled vegetable kabob, a variety of fresh vegetable dishes that vary by season, and a selection of delicious salads. Some of our seasonal vegetable selections include Hickory-grilled Asparagus, Smoked Sweet Corn, Baby Cucumber & Tomato Salad, Cauliflower with a Barbecue Beurre Blanc Sauce, and Steamed Broccoli with Garlic Oil & Parmesan Cheese. Where does the name "Fiorella's Jack Stack" derive from?
Fiorella's Jack Stack Barbecue was originated in 1957 by the Fiorella family in the traditional style of a storefront barbecue house with a modest selection of 5-6 items, originally named Smoke Stack Barbecue. Jack, the eldest son, worked there from its inception until 1974 when he decided to branch off to expand the barbecue theme and start Fiorella's Smoke Stack of Martin City. When Jack decided to open his second restaurant in Overland Park back in 1997, he decided to change the name of his
restaurants
to Fiorella's Jack Stack Barbecue, a derivative from the original Smoke Stack Barbecue.

What is the difference between pork spare ribs and baby back ribs?
Pork spare ribs are the traditional slab of ribs. They come from the belly of the pig, behind the shoulder. They include 11 to 13 long bones. There is a covering of meat on top of the bones and between them. Baby back ribs, sometimes called loin ribs, are cut from the loin section. They are shorter and smaller than spare ribs. They have a covering of meat over the bones and also between them. Because they do come from the loin, they are leaner and meatier than spare ribs.

What exactly is a "Burnt End"?
Don't let the name fool you, there's nothing "burnt" about them. The name came about because when the meat is left
to barbecue for an extra amount of time, the outer surface, or bark, will take on a darker appearance than normal. Hence, the name Burnt Ends. They can be cubes of beef brisket, ham, pork, or sausage, which are tender on the inside and lightly seared on the outside. Burnt Ends have always been a Kansas City favorite.

For Carry Out: How much food should I order per person?
Please note that the following are simply suggested servings. Added variables such as big eaters, light eaters, or little children will affect the amount of food you'll need when accounting for all of your diners. For assistance, please contact the

you'll be visiting and our experienced staff will be more than happy to help in making suggestions.
Please use the following guidelines as starting points: One pound of meat will feed 2 to 3 people. One full slab of pork ribs will feed 2 to 3. A quart of Hickory Pit Beans or Cheesy Corn Bake feeds 6 to 8. Crown Prime Beef Ribs feeds 1 to 3. If in doubt, order just a little more than you estimate you'll need, just to be sure to have enough.

How early in the day can I pick-up my Carry Out order?
Our carryout departments open at 10:00am, but special arrangements can be made ahead of time to pick-up orders as early as 9:00am. During Kansas City Chiefs home games, and certain holidays, our carryout doors open up early at 9:00am. Please contact the

Do you ship your barbecue across the country?
Yes. Our
Jack Stack Shipping division began operations in 2000 and has experienced spectacular growth, due entirely to our many patrons in Kansas City and across the country. We practice the same "keys to success" of premium barbecue dishes and unmatched customer service that folks have enjoyed for almost 50 years at our restaurants, catered events, and our private dining rooms. Orders may be placed by phone at 816-452-1185 (local) or toll free 1-877-419-7427. You may also order online. We will give you informed advice about any topic... how to shop if you're on our web site, detailed product information, how to estimate quantities, shipping hints, and even that all-important gift message, etc.
We appreciate your first order, but we’re really aiming for your twentieth order. (Our customers tend to become long term regulars.)

Can I order through your catalog and then pick it up at one of your restaurants?
Yes. The order must be placed by calling
Jack Stack Shipping locally at 816-452-1185. This is an option many residents choose when traveling out-of-town, or as a gift for someone in town that'll be having their meal at a later date. We ask that you give us 24-hour notice to prepare the order and arrange for delivery to the

No. However, the Smoke Stack BBQ restaurants are currently owned and operated by Jack Fiorella's siblings. Fiorella's Jack Stack Barbecue

Do you make your own sausage?
Our Sausage is made in Kansas City's Strawberry Hill District, and prepared in our distinctive style. We then barbecue the links "low and slow" over a hickory-wood fire. These links are a Sausage delicacy, and will arguably be the leanest sausage you've tasted.

What makes your Hickory Pit Beans so special?
Our One-Of-A-Kind Hickory-Pit Beans transforms any ordinary pot luck or picnic into something extraordinary. Shreds of Hickory Roasted Beef Brisket account for over 20% of our meaty Bean side dish. Our beans have been featured in numerous publications and shows, including the Food Network with Chef Bobby Flay in “BBQ with Bobby Flay”. Many people come to our Kansas City restaurants just from hearing about our Hickory Pit Beans. Just remember, there's nothing baked about these beans. They've truly been smoked in our old-fashioned, Hickory-fired, brick barbecue pits.

Do you have any restaurants outside of Kansas City?
No. Fiorella’s Jack Stack Barbecue currently has four
Restaurant
locations. All are located in the Greater Kansas City area. Our original location is in South Kansas City, referred to as Martin City, at 135th Street & Holmes Road. A second Restaurant is located in Overland Park, Kansas, in the heart of Johnson County, at 95th Street & Metcalf Avenue. Our third location lies in downtown Kansas City, Missouri, at 22nd & Wyandotte, in the historic Freight House, just North of Union Station. Our newest restaurant is located in the Country Club Plaza, regarded as Kansas City’s premiere shopping and tourist destination.

We're sorry, but we no longer offer this service for our customers. Our experience shows that more and more customers were choosing the trouble-free option of purchasing our sliced meats by-the-pound for their holiday meals. For more information, please contact the
